No bake Cookies


I know these cookies look like well... poop but they are probably my favorite cookie. Peanut butter and chocolate, cant go wrong there! They are a little tricky to make so dont get frustrated if they dont turn out just right the first few times you make them.
RECIPE:
2 c sugar
1/4 c cocoa
1/2 c milk
1/2 c butter
1 tbls. cornsyrup
1/4 c peanut butter
2-3 c rolled oats
DIRECTIONS:
Get out all ingredients before beginning. Put out piece of wax paper on flat surface. In large pan mix sugar and cocoa. Add milk. Heat stove to med high. Add butter and corn syrup. Bring to a boil. Boil for exactly 5 min stirring occasionally. Stir in peanut butter. Take off stove and quickly add oats. Start with 2 cups, if it doesnt look like its going to set up add 1 more cup oats. Place immediately on wax paper. Once cooled enjoy!

Stuffed french toast



RECIPE:

BATTER: 2 eggs

1 c milk

1/2 c sugar

1 tsp cinnamon

1 tsp vanilla extract

FILLING:

1 1/2 c cream cheese

1/4 c choc chips

1/2 c diced bannana

1/8 c orange juice

1/4 c sugar

1 tsp vanilla extract

DIRECTIONS:

Mix all BATTER ingredients. In seperate bowl mix all FILLING ingredients. Preheat oven to 350 degrees. Heat large skillet to med to med-low. Dredge bread in mixed BATTER and place in skillet. Cook until golden brown on both sides about 2 min. Remove from pan. Divide FILLING between 2 pieces of bread top with remaining 2 pieces of bread. Bake for 8 minutes.

COMMENTS: I think this recipe is plenty sweet without the chocolate chips but is sweet and delicious with them. I got this recipe from food network and made it for Dennis for Valentines breakfast. We both loved it!

Mexican salad




RECIPE:
1 lb hamburger
1 c uncooked rice
1 can diced tomatoes
1/2 can diced chilles
1/3 c ketchup
1 tsp brown sugar
TOPPING:
Chopped lettuce
Grated cheese
Crushed tortilla chips
DIRECTIONS:
Cook rice as directed on package. Place hamburger in skillet, cook til brown throughout. Add tomatoes, chilles, ketchup and brown sugar. Simmer for 10 minutes. Top rice with hamburger mix and other toppings. Enjoy!
We love this recipe on nights when we dont have much time to prepare dinner. I enjoy pairing it with corn or muffins.

easy yummy sugar cookies




RECIPE:
1 c sugar
1 c powdered sugar
2 eggs
1 tsp cream of tarter
4 c flour
1 c butter (room temp)
2 tbls oil
1 tsp vanilla
1 tsp salt
1 tsp baking soda
MAKE:
Cream butter, sugar and powdered sugar. Add eggs, oil and vanilla. Mix in remaining ingredients. Roll out to desired thickness. (I prefer 1/4 in thick) Cut all cookies to desired shape. Place on ungreased cookie sheet. Bake @ 350 for 12 min. (less if getting any brown on them) Let cool before frosting. Enjoy!
TRICK: I like a soft cookie so I have found placing the frosted cookies in a ziplock bag or something enclosed softens them overnight making them even more delicious! An added bonus to this cookie is no overnight refridgeration required.
